Hello everyone, thank you for your support and the previous post. I am bouncing back from my dreadful weekend. I was at the gym this morning at 6:00 am for my leg-day work out, ate breakfast and went to school. I have a chemistry test coming up so I spent most of my break between classes in the tutoring lab.
Since I eat before my 9:30 am class my stomach is growling by 12:30. I took a break and had my pre-packaged lunch. I'm very excited to share this yummy meal. Baked tofu salad and homemade sweet potato "chips".
I took this package of tofu sliced it into 6 thin slices and backed for 20 minutes on each side.
I broke apart 2 tofu squares, threw in beets, chick peas and walnuts and made this lovely salad.
In case you want a close up of my baked tofu, looks like chicken but it definitely does not taste like it. I like the taste of tofu so I didn't use any flavoring but you can do it for a different taste!
These are my "sweet potato chips" they look like a chip but mine are a little to soft too be considered a chip, so I'll use quotations to name them. Regardless, they're a great snack to pack on the go.
This weekend was very gloomy on several counts, 1) it was raining/ cloudy everyday, 2) I procrastinated on all of my assignments, which makes me extra stressed for the week to come, 3) emotional eating took over myself this weekend.
I was feeling very disappointed in myself, hence the minimal post this weekend. Not to mention boyfriends team lost the Superbowl! I felt like giving up on blogging, running and laying in my bed to vegetate my life away. Until I snapped out of it, I had a good night sleep and woke up bright and early for my Pilate's class.
Again it was raining but that didn't stop me from driving to the gym, I ended up staying for Laurie's class. I've known Laurie since I was 13, when I first started going to the gym I would take her aerobics class. She now teaches step and abs, I haven't done a step class in forever so I was just getting the hang of all the moves, it was something different so I enjoyed it.
After the class Laurie invited me to run with her group on Saturdays, they run 10 miles and meet near my house. I was so touched that she did that, she also ran the half marathon but much faster than me! I think I'll try it out but I also have to keep training for my February half marathon as well.
I am even more dedicated to being healthy after this past not-so-healthy weekend.
Good morning! I didn't have a chance to post yesterday because I was running around all day, I couldn't even volunteer! I was spending copious hours at the computer doing my anatomy project so eventually I had to get up off my butt and get moving.
I spent 2 hours at the gym and it felt awesome. Sometimes I just love going in the middle of the day I feel much more energized! I did the stair master for the first time in oh say a month?? I don't know why I stopped using this machine I absolutely love it.
Afterwards, my grandma invited me over to taste what she had made. My grandma is a chef, she should open up a restaurant her food would sell so quick, so of course I hopped in the car and went.
She had a lovely eggplant lasagna made for me, it was to die for! My 6 other cousins were also at her house. The oldest live an hour or so away so it was nice to see them. I feel so old when they're around because I always picture them as little girls but in reality they are teenagers, 14 and 16!
I think back to that age and it feels like light years ago.. even though I'm only 19! I'm so happy they are healthy and enjoying high school unlike myself at that age. They told me they got a gym membership and one of them is trying out for cross country. Can you imagine how proud I am? :)

I ended the day with Chris of course, he's sick so we stayed in and just hung out.
As for today, I have 2 weeks worth of college algebra homework to do, I have to finish my anatomy project and hopefully make it to my kickboxing class!

Eleven Things About Me:
1.) I have a brother, most people don't know this about me. He is eight years old and technically he's my half brother from my dads marriage. He's 10 years younger than me but acts like hes my age. He is way too smart for his own good but never the less he is my little bro and I love him.
2.) I am so nervous about nursing school/ entrance exams I am such a worrier when it comes to applying to things, I swore in high school I would get a 400 on my SATs and be denied by every university. In reality I was accepted to all the school I applied to and scored 1100. But still I cant help it, nursing school makes me anxious!
3.) I may be withdrawing from coffee due to the fact that my keurig has a mind of its own. Some days it makes coffee and others is just freaks out and gives me water -_- this is so not cool. I miss my coffee, I'm tired and suffer from headaches since the malfunctioning began.
4.) I'm a Monday mornings Pilate's freak! Ever since I took Pilate's at my gym I go every week, its the best thing after a long Sunday run. It's safe to say I'm hooked!
6.) I live with my boyfriend, due to financial reasons my mom graciously allows him to stay with us until he saves up for his own apartment. At first, it was weird sharing everything with him but now its normal. We both do our own things so it's never over bearing to have him around.
7.) My favorite movie of all time is The Sound of Music. My mom made my sister and I watch it at an early age and we loved all the singing and dancing, still true today I love it!
8.) I have a love/ hate relationship with my dog Candie. She loves to bark at all hours of the day she can drive me crazy but shes so little and cute,plus I've had her for forever so she's basically apart of the family.
9.) My sister is my best friend, shes been there for me from the start. We're only one year apart so we've always done everything together. Of course we fight but now that we are older we have a much better relationship.
10.) I tend to keep people at an arms distance. I let myself get super busy that I forget about friends and other things and become somewhat of a hermit. I don't do it on purpose it just kind of happens but I need to work on it and build better relationships with people.
11.) I write a "To Do" list daily. Partially to remind myself of the things I need to do and partially to feel accomplished at the end of the day. It's always written in my iPhone under the notes.

I moved out last year at the age of 18 for a year of college in Orlando but I moved the following summer.

Great questions, two moments immediately came to mind. In 11th grade I PR'd during a race, I was so happy I cried tears of joy, I've never been that happy. The second was stepping off the plane and seeing Chris for the first time in 5 months. Either one, I'd take :)

It's already February and I had hoped to join in on WIAW but of course this week I've been hammered with assignments for school. I guess its time to get down to business and start studying much more bleeeh not fun.
Anyways, since I forgot to photograph my meals yesterday I will be posting about what I made this morning. I made quite a mess with my juicer but it was all worth it.
Instead of using a mango and papaya with my carrots I used 2 oranges and about 4 carrots to make juice.
I couldn't find the top piece that pushed down the food so I used a cup. It was VERY messy to say the least I think I have some pulp in my hair,not to mention all over my kitchen.
I opened up the compartment where all the pulp goes and guess what was there? The pusher downer thingy!! I was so upset I didn't look there in the first place, but hey at least I didn't lose it.
The last time I made carrot juice I used the pulp to make carrot pulp cake, this time I made cupcakes! I love the idea of a bite size treat! I sprinkled chia seeds on to them and they came out delicious.
Later today I'm going to drop them off at my uncles house, he has 3 little kids so they'd love these cupcakes :)
